Reply to Video Game flight stick mods?

So after watching immuzikation's video (http://www.youtube.com/watch?v=E447XeggqX8) I am interested in learning more about these video game flightsticks ... I don't play video games much so I really had no idea there were so many different flightstick options, many with arcade buttons. My question is, how easy of a mod is this? Do all these flightsticks connect via USB, and is it a simple process to translate whatever it is doing to MIDI?
