How does the mapping on these work? Is it very flexible to make your own custom mapping? When working with more than one X1, does it recognize the them differently right away or do you have to set each on on it's own global channel?

And are there any other little quirks I should know about them as far as making your own mappings is concerned?

Two questions, what is NHL mode? And when in Midi mode does that mean you can't take advantage of the HID capabilities?

They automap themselves by default, but you can edit it as much as you like.

It's easier to understand in NHL mode, but not NHL mode isn't as flexible as midi mode is. Just as flexible as any other midi controller in midi mode. They show up as X1serialnumberhere in the controller manager automatically.
