MediaMonkey rocks. It does use the LAME encoder for conversions to mp3. However, the tool is capable of "seamlessly" converting from anything to anything (provided that the format is supported in the first place).

LAME has proven to be "more than good enough" for ANY use with mp3's. In tests conduced about 5 years ago, LAME lead other converters with VBR, and low(er) (<160kbps) mp3's. In general, that is NOT the sweet spot for DJs.

I also have Adobe Audition (not FREE) that uses the Fraunhofer codec. In detailed tests (mostly using spectrum analysis tools), the Fraunhofer converter is better than LAME. The largest differences were found for high(er) bitrate CBR mp3's. In any attempt to upsample the mp3 back to wav...the resulting wav file was cleaner, with less added noise, when using the Fraunhofer codec. I could NOT hear any of these differences...so how important the differences are is left as an exercise for the reader.

iTunes is a lot of excess baggage for converting files, and gives you next to no ability to modify the WAV before encoding.
